Tangy Potato Salad

A creamy tangy mouthwatering crowd pleaser. A perfect summer addition to a lazy summer lunch or BBQ. This potato salad is a fabulous addition to any feasting table. The spring onion adds a delicious crunch and the crispy bacon adds additional texture and saltiness that cuts through the creaminess of the mayonnaise.

Ingredients

With only 4 ingredients you can whip this delicious potato salad within minutes

  • Boiled baby potatoes
  • Crispy Bacon
  • Spring Onion
  • Finely sliced Red Onion

Dressing

A. yummy tangy dressing that includes lemon juice to cut through the fattiness of the mayonnaise and to add the zing of summer.

  • Whole Egg Mayonnaise
  • Lemon Juice
  • Salt & Pepper to taste

Zinging with the freshness of lemon, this potato salad is delicious for lazy afternoon lunches.

Ingredients

  • Ingredients
  • 500g washed baby potatoes
  • 1 Spanish onion finely sliced into half rings
  • 3 Spring Onions cleaned and finely chopped into rings
  • 4 Rashers crisply fried bacon crushed into fine pieces
  • 1 Cup finely chopped parsley
  • Dressing
  • 3 table spoon favourite Mayonnaise
  • ½ Lemon juice
  • 4 table spoons white vinegar
  • 1 table spoon olive oil
  • Salt and Pepper to taste

Instructions

Method

Wash potatoes thoroughly

Put into a pot and cover with COLD water

Bring to the boil for 15 minutes

Test for readyness by pricking with the point of a sharp knife

Take off the boil and allow too coll

Keep skin on and cut into halves / quarters ( dependent on your preferences)

Toss together with red 0nion and bacon

Dressing

Combine all the dressing ingredients

Season to taste

Pour the dressing over the salad ingredients and toss to coat evenly

Garnish

Sprinkle with fresh parsley and spring onions

Notes

Add egg for extra flavour and texture.
