Tannie (Afrikaans for Aunty) has perfected the art of making Rocky Road. It’s the best Rocky Road ever. Rich, creamy, crunchy and chewy with a hint of peppermint. Once you’ve mastered the art of this recipe you’ll never go back to shop bought Rocky Road.

Ingredients you’ll need for this ripping Rocky Road

  • 200g Dark Chocolate
  • 200g Hazelnut Chocolate
  • 360g Milk Chocolate
  • 49g Peppermint Crisp (1)
  • 50g Sshmallows (small marshmallows just for Rocky Road)
  • 150g Snakes

Cheat Sheets for making the best Rocky Road

  • Melt the chocolate slowly with love and care, don’t be in a rush
  • Make sure that the chocolate is at room temperature when you melt it
  • To temper the sweetness, use more dark chocolate and reduce the quantity of milk chocolate

Tannie(Afrikaans for Aunty), has perfected the art of making Rocky Road. It's the best Rocky Road ever. Rich, creamy, crunchy and chewy with a hint of peppermint. Once you've mastered the art of this recipe, you'll never go back to shop bought Rocky Road.

Ingredients

  • 200g Dark Chocolate
  • 200g Hazelnut Chocolate
  • 360g Milk Chocolate
  • 49g Peppermint Crisp (1)
  • 50g Sshmallows (small marshmallows just for Rocky Road)
  • 150g Snakes

Instructions

Chocolate Preparation

Crush the peppermint crisp with a roller and keep to the side

Break the remaining chocolate into bite size pieces and add to a microwavable bowl

Use the microwaves melt setting to melt the chocolate, checking and stirring every 2 minutes ( max. 4 minutes in total)

Remove before it is too runny to prevent from getting tacky

Snakes Preparation

Cut into small pieces while the chocolate is melting

Final steps to the perfect Rocky Road

Once the chocolate is at the right consistency - loose but not too runny - add the snakes and the marshmallows in small quantities at a time, to ensure that all ingredients are well mixed

Add 50% of the peppermint crisp to the mixture and continue to mix well

Pour the rocky road into a tray lined with baking paper, spreading it out into the corners

Sprinkle the remaining Peppermint Crisp evenly over the top of the Rocky Road mix

Place in the fridge for 30 minutes to set before cutting into bite size pieces

Keep in a sealed container in the fridge

Notes

If you are allergic to nuts, use plain chocolate instead Peppermint crisp can make the Rocky Road difficult to handle so do not melt it with the other chocolate. Always add it separately and let the heat of the other chocolate melt it.
