The best part of this recipe is the crunchiness of the fresh ingredients that make this dish sing. Together with the fresh Cos lettuce, it’s a simple meal that’s deliciously healthy. It’s a real family favourite in our household. The fresh ingredients are added right at the end of the cook to ensure that they stay as crisp as possible and to ensure that each individual flavour comes through.

- 1kg Chicken Mince
- 1 stalks lemongrass - diced finely
- Coriander Roots (1 x bunch) - diced finely
- 55g (1 medium to large) knob of ginger diced finely
- 1 bunch of spring onions cut into small rounds
- 2 cloves crushed Garlic
- 2 Red Birds-eye Chillis
- Cos lettuce leaves peeled off and used as cups
- 125ml Sweet Chilli sauce ( you will add according to taste)
- 60ml Fish sauce - for salty taste
- Sunflower oil for frying chicken
- Juice of 2 Limes and 1 lemon juice for sourness
- * Optional extra: finely diced red onion
- Garnish
- Lime cheeks
- Coriander leaves for sprinkling on afterwards

Fry chicken mince until lightly browned
Add the fish sauce, sweet chilli sauce and lime/lemon juice until you are happy with the sweet/ salty and sour flavour
Add all other ingredients - ginger/ lemongrass / coriander roots/red onions.
Stir through thoroughly
Serve in lettuce cups garnished with lime cheeks
Notes
Do not let the fresh ingredients cook too much as they still need to be a bit crunchy. Can also be served with rice
