“I have baked this slice more times than I can remember, but I do know that every time it is made with love, given with joy and received with pleasure.  Sometimes made for sad souls as my way of helping them heal, but also to celebrate new life, and anything in-between.  It is ridiculously quick and easy and so tasty, best enjoyed with a cup of rooibos tea, but be warned, it is hard to stop at one square! “

When the going gets tough, there's no better pick me up remedy than one of Angie Dower's super Healthy Muesli slices. Make them in bucket loads for those late afternoon (or morning) emergencies. Super delicious and easy to make, they hit the spot every time.

Ingredients

  • 1.5 cups Oats
  • 2 cups Self Raising Flour
  • 1 cup Sultanas or Cranberries
  • 1/2 cup sunflower seeds and/or pumpkin seeds
  • ¾ cup Brown Sugar
  • 250 g Butter
  • 2 Tablespoons Honey

Instructions

Muesli Preparation

Pre-heat the oven to 170°C

In a bowl, mix together the oats, flour, sultanas, seeds and sugar

Melt the butter and honey

Pour butter into dry ingredients, mix well and press into a lined baking tin

Bake for about 40 minutes at 170° Celcius (fan forced) until golden brown

Leave to cool completely before cutting in slices
