On its own, the smoked rainbow trout – which is the hero of the dish – can be quite overpowering. But, when combined with the freshness of the dill, the creaminess of the cream and the tanginess of the lemon, you have a sensationally satisfying dish that delivers flavours in layers. It’s just absolutely moreish. For added bite, sprinkle in some freshly chopped chillis and serve with our favourite garlic bread.

Decadent Smoked Rainbow Trout Pasta Cheat Sheet Tips
- The freshness of this pasta is what makes it so good. So, make it just before serving.
- I like to use the Smoked Rainbow Trout, but you can also use Hot Smoked Salmon, or normal Smoked Salmon too.
- This is a creamy pasta. The sauce should coat the pasta completely, and should not be too runny.
- If you think your sauce is too thick, add some of the reserved pasta water.
- Add the lemon according to taste. I like it to taste the tanginess of the lemon, so I always add all the lemon juice and sometimes even a bit more.
Decadent Smoked Rainbow Trout Pasta
This Decadent Smoked Rainbow Trout Pasta is not for the fainthearted. The simple ingredients work magically together to deliver a rich, complex dish that's layered full of flavour. It will not disappoint.
Ingredients
- 320g Smoked Rainbow Trout fillets (Deboned & ready to serve)
- 2 Medium Onions chopped finely
- 1 Bunch Fresh Dill
- Juice of 2 Lemons
- 600ml Pure Cream
- 4 Red Chillis chopped finely
- 500g Spaghettini Pasta
- Salt & Cracked Pepper
Instructions
Pasta - Cook according to packet instructions
Add pasta to boiling water that has been seasoned with salt and a dash of olive oil
Boil for 5-7 minutes for an al dente finish
When ready drain, and add to pasta sauce
Reserve some of the pasta water to add to your sauce for later if required
Salmon Preparation - While the Pasta is cooking
Shred the Smoked Rainbow Trout fillets into pieces and set aside
Sauce Preparation - While the pasta is cooking
Fry the chopped onion until translucent in a large flat bottomed pan
Add the Cream, bring to a quick boil and then turn down to a gentle simmer
Add the shredded Smoked Rainbow Trout and stir through, coating well
Add half the chopped dill
Add the lemon juice
Season with salt and cracked pepper
The sauce is ready when the trout is heated through and it has thickened and reduced slightly
To Serve
Add the pasta to your sauce
Stir to coat through evenly
Add some of the reserved water if you feel the sauce needs a bit more liquid
Garnish with the remaining fresh dill and chopped chillis

This pasta is meant to be creamy. Don't be too hasty to reduce the thickness of the sauce.
