When it comes to pickles, you’re only limited by your imagination
Ingredients
- Carrots
- Swedes (or Turnips)
- Cauliflower
- Jalapenos
- White Vinegar
- Water
- Salt
- Chillis
Cheat Sheet for Preparing Perfect Pickles
- Make sure your glass jars seal tightly
- Sterilise jars beforehand by filling them with boiling water and then let them stand for 2 minutes prior to use
- Turnips / Swedes tend to look unappealing when pickled so we add a few wedges of beetroot with the swedes to give a lovely pink hue

They add colour and mouth-watering goodness to your mezza platter and pare well with olives, cheese and crispy bread for sundowner drinks. They're a Lebanese tradition. - Glass bottling jars
- Selected vegetables including
- 1 kg Carrots
- 1 head Cauliflower
- 1 kg Swedes
- 500g Jalapeno
- 3L Water
- 3L White vinegar
- 1 table spoon of Rock Salt per 1Lt jar
- 1 Beetroot
Instructions
Vegie Preparation
Cut the selected vegetables into bite sized pieces
Put vegies into pickling jars
Add Salt
Fill jars with 50% water and 50% white vinegar
Swedes
To give the Swedes the pink colour, add 1/2 Beetroot to the jar before closing
Carrots
To add some extra spice to the carrots, add 1 cut Red Eye Chilli
