- Don’t push the top of the toaster down too hard as you don’t want to compress the filling too much
- A little spread of butter on the outside of the bread helps with achieving a delicious golden brown toastie
Chicken Mayo Sandwich
This Chunky Crunchy Chicken Mayo Toastie will become a family favourite in no time. We like it best with left over roast chicken, but if you don't have any, simply buy a ready roasted chicken instead. Or, if you've got time on your hands, poach some chicken breasts in salted water and black peppercorns. You'll find it difficult to resist this succulent, oozing, chunky, crunchy toastie. It's perfect for summer holiday picnics.
Ingredients
- 500g chopped Roasted Chicken
- 1 Medium Red Onion diced
- 100g Gherkin chopped finely
- 4 Tablespoons mayonnaise
- Juice of 1 Lemon
- Salt and pepper to taste
- 8 slices of your Sourdough Bread
- 1 Chilli or Jalapeno Peppers (Optional) Chopped
Instructions
FiIling Preparation
Chop chicken into chunky bite-size pieces and place into a mixing bowl
Add the diced onion and gherkin to the bowl
Add in the mayonnaise
Squeeze in juice of 1 lemon
Mix all of the ingredients together thoroughly
Chop the chilli or jalapeno finely, add to the bowl and mix in
Season with salt and cracked pepper to taste
Sandwich Preparation
Thinly spread the OUTSIDE of the sliced bread with butter
Heap the mixture onto the unbuttered side
Top it with the second slice
Place on pre-heated toaster and toast until golden brown (estimate 5 minutes, depending on the heat of your toaster)
Don't press the sandwich maker down too hard as you don't want to squash the toasties too much

Replace the mayo with aoili for a hint of garlic flavour
