And this fingerlicking Sticky Gameday Chicken Wing recipe raises your gameday catering to a whole new level. They are a real crowd pleaser and will not last for long. So roll up your sleeves and get stuck in. Nothing could be easier. The trick is getting the chicken to crisp, while keeping the meat moist. Once you’ve nailed it, the rest is history. When it comes to sauces, don’t be limited by your imagination. For this trio of sticky wings, I used my own sauces for the three glazes – honey soy, chilli and BBQ. But if you’re short of time and under the pump, simply find your favourite off the shelf equivalent to toss the wings in.

- While you can use the whole wing, tips and all, we prefer to remove the end tips and then separate the arm from the elbow. This is the most time-consuming part of the recipe, but it’s well worth it.
- Follow the simple pictorial images below to get the perfect chicken wings ready for dressing and cooking
- Make sure that your wings are very dry when you start the prep for this recipe.
- Use baking powder NOT baking soda. And don’t be too heavy handed with the baking powder as it can impart a ‘metallic taste’ to the mouth.
- Turn the chicken while baking to make sure that they crisp and brown evenly throughout.
- If you’re short of time, simply find the sauces you like best to coat the wings with. Just remember you want a sauce that can stick to the wings
- The honey soy sauce calls for minced garlic and ginger. Use a micr plane to get the perfect “mince” consistency.
Trio of Sticky Gameday Chicken Wings
This Trio of Sticky Gameday chicken wings are the perfect recipe for gameday catering. They are ridiculously easy to make. Once you've got the hang of it, they are guaranteed to be a regular on your menu - any day of the week. They are a real crowd pleaser. The sauces can be prepared while the wings are baking, reducing your total cooking time.
Ingredients
- Chicken Wings
- 3.5kg Chicken Wings (roughly 20-24 wings)
- 2 tsp Salt
- 4 tsp Baking Powder
- Honey Soy Sauce (Recipe provided below)
- 750ml Salt reduced Soy Sauce
- 4 tablespoons Honey
- 2 Garlic Cloves minced
- 30g fresh Ginger minced
- 2 tablespoons Brown Sugar
- Chilli Sauce
- (A Mrs Robinson's Affair special chilli Sauce still to be posted)
- 150 - 200ml Nando's Peri Peri sauce is an excellent substitute and it has a variety of heat options to suit your palette
- BBQ Sauce
- 140g Tomato Paste
- 4 tablespoons Worcestershire sauce
- 3 tablespoons brown sugar
- 3 Tablespoons Smoked Paprika
- 2 tablespoons Brown Vinegar
- 2 tablespoons White Vinegar
- A dash of Hot English Mustard (less is more)
- Salt & Cracked Pepper
- Optional: 1/2 a teaspoon Cayenne Pepper
- Garnish
- Fresh Coriander
- Toasted Sesame Seeds
- Fresh Spring Onions
- Fresh Chillis
Instructions
Wing Preparation
Preheat an oven to 220° Celcius
Line 2 baking trays - with baking paper
Pat wings dry
Remove tips, and section into two - cutting through at the joints
Add wings to a large bowl
Sprinkle with salt and baking powder and then toss well to distribute through
Place the wings onto the backing tray in rows, making sure they are separated out and don't touch
Place in the oven and bake for about 40-50 minutes, turning constantly to ensure an even cooking
When crisp, remove from the oven, divide into 3 equal quantities and then toss in the pre-made sauces
Sauce Preparation - If you're making homemade sauces they can be made while the chicken wings are cooking
Honey Soy Glaze
Add all the ingredients into a flat bottomed pan
Bring to the heat stirring constantly to mix the ingredients well and until the sauce starts to thicken and reduce slightly
When it has a glaze like consistency, add the chicken wings and toss until well coated
Garnish with sliced spring onion and toasted sesames
BBQ Sauce Glaze
Add all the ingredients into a flat bottom pan
Bring to the heat stirring constantly to mix the ingredients well and until the sauce starts to thicken and reduce slightly
Add the chicken wings and toss until well coated
Garnish with Coriander
