Sweet Potato with Aromatic Butter

A baked Sweet Potato( Kumera) is my favourite go to comfort food. They are easy to prepare and bake in half the time of normal potatoes. We love slathering our sweet potato with lashings of the best aromatic butter. The freshness of the coriander and zing of ginger and chilli combine well with the sweetness of the potato to really make this recipe sing.

Quick & easy to cook using only a few simple ingredients

Ready for baking – washed sweet potato, sprinkled with salt

Roast Sweet Potato with Aromatic Butter

A deliciously simple dish consisting of roast sweet potato slathered in our best aromatic butter.

Ingredients

  • 4 cleaned sweet potatoes
  • Kosher salt
  • Aromatic Butter

Wash the sweet potato thoroughly, prick all over with a fork and place on lined tray

Sprinkle with rock salt

Preheat oven to 200°C

Once prepared, place in pre-heated oven and bake until tender, 45 to 50 minutes.

Remove from oven and slice lengthwise with a knife to open

Top with a pat of our best aromatic butter.

Season with salt and pepper

Sprinkle with fresh coriander before serving

Notes

To check if your potato is ready, just gently slide a sharp knife into the thickest part of the potato. If it cuts through smoothly with no resistance, your potatoes are ready to go
