This Roasted Cherry Tomato Pasta with Fresh Herbs is a delectable firm favourite in our household. The roasting and caramelisation of the tomatoes together with the fresh herbs and garlic, deliver a robust flavour that’s sweet, acidic and herbaceous at the same time. Only a few simple ingredients deliver this superb pasta that’s vegan friendly too.

Only a few ingredients are needed for this superb pasta. Most of them are guaranteed to be your home staples.

  • Cherry Tomatoes – My favourite right now are the Kumato Cherry tomato. They’re juicy and packed with flavour.
  • Red Onion
  • Garlic
  • Fresh Herbs – we use a mixture of Basil, Continental Parsley, Oreganum and Thyme
  • Balsamic Vinegar
  • Brown Sugar
  • Salt & Cracked Pepper to taste
  • Olive Oil
  • Pasta of Choice – we love spaghettini

Cheat Sheets to pimp up this pasta

  • Add some prawns to this pasta for a summertime variation. We like to cook and flash fry the prawns separately. Fry them in olive oil, a squeeze of lemon and salt and pepper to taste. You want to keep the flavours on the prawns simple so they complement that of the roasted tomato.
  • The roasted garlic adds a wonderful earthiness to the flavour of this recipe. We use a whole head of garlic. Cut off the tips of the head, and roast it whole. Once ready, squeeze out the sweet garlic one time and stir through the pasta.
  • Add red chillies if you want a touch of spice.

This recipe tantalises the tastebuds. The sweet, slightly acidic flavour from the caramelised tomato, combined with the earthiness of the garlic and the freshness of the herbs, creates a taste sensation that makes the mouth water. Ingredients

  • 1 Kg Cherry Tomatoes - My favourite right now are the Kumato Cherry tomato. They're juicy and packed with flavour.
  • 1 Red Onion
  • 1 whole head of Garlic
  • 1 Bunch fresh Basil,
  • 1 Bunch fresh Continental Parsley
  • 1 Bunch fresh Thyme
  • 1 Bunch fresh Oreganum
  • 100ml Balsamic Vinegar
  • 1 tablespoon Brown Sugar
  • Salt & Cracked Pepper to taste
  • Olive Oil
  • Pasta of choice - we love Spaghettini

Instructions

Preheat the oven to 200°C

Sauce Preparation

Cut the cherry tomatoes in half and add to an oven proof dish

Sprinkle with the teaspoon of sugar

Slice the onion into fine wedges and layer over the tomato

Cut off the top of the head of garlic add to the dish

Roughly Shred the fresh herbs and sprinkle over the top of the ingredients

Season with salt and black pepper

Drizzle with balsamic

Drizzle with olive oil

Toss all the ingredients together so that they are well coated with the olive oil and balsamic vinegar

Cooking Instructions

Place in the oven uncovered

Check every 10 minutes for caramelisation, making sure to toss the vegetables through the juices each time

It should be ready after about 30 minutes depending on the heat / strength of your oven

Before serving, squeeze out the roasted garlic and toss all the ingredients in the natural juices again, making sure the garlic is evenly distributed

To Serve

Serve with pasta of your choice

Place pasta in a serving bowl

Shred a generous layer of fresh herbs on top

Then toss through to coat the pasta with the sauce

Notes

Prawns are a simple way to pimp up this pasta. To spice it up, add a touch of red chilli when cooking.
